Straight Bourbon

If it's not broken don't fix it! ~

We like whiskey and when we meet the cask that takes you back, warms us from the inside out, and refuses to allow us to put the glass down, we bottle it! Why change something that is perfect the way it is? We want to celebrate these rare finds and let us experience the same moment we had in the rick houses, sometimes even at cask strength.

~Release No.3 Fall 2017~

Distilled in Indiana at the old Seagram's facility, this bourbon sat in old, red brick rick houses for nearly 10 years before seeing the light again. We were rooting around trying to find some products for a client when we came across these gems. A classic mash-bill from the old distillery, we were able to purchase 12 barrels in total. We released some as single barrels and others were destined for exotic cask finishes.

SHERRY CASK Finished bourbon

Popularized by Scotch Whiskey distillers, finishing whiskies in used casks allows the delicate characteristics of past occupying products to mingle and marry with the smooth and bold characters of Doc Swinson's Straight Bourbons altering the bourbon to create a completely new experience for the bon vivant at heart. Often we find the sherry casks offer nutty, a touch of sweet and an irresistible shade of ruby to the profile.

~Release No.3 FALL 2019~

For this release we started with our Doc’s Single Barrel 12 year Tennessee bourbon and introduced it to some Oloroso & Pedro Jimenez Sherry Butts (500L) from Spain. From this delicate dance emerged a spirit dryer than it’s constituents parts, yet bursting with complexity all while retaining much of its bourbon characteristics (a rarity in finished bourbons). Bottling at 90 proof ensures a smooth sip without washing it out.

For this release we started with our Doc’s Single Barrel 12 year Tennessee bourbon and introduced it to some Oloroso Sherry casks from Spain. ~Release No.1 Spring 2018~

This 12 year old bourbon (aged 10 years in Indiana rick houses and 2 years in our Washington rick house) is finished for 4 months in dry Oloroso sherry casks form Cadiz, Spain. We like how the dry, nutty, blanched almond notes of the sherry play with the stone fruit-forward bourbon. At a strength of 102 proof it shows some one of a kind qualities that make it hard to put down.

STRAIGHT RYE WHISKEY

A little spice makes… RYE WHISKEY!

If bourbon is the proud american spirit than rye is its feisty cousin, opinionated, bold and accustom to finding itself ready for a scuffle. Doc Swinson’s Straight Rye Whiskey is the perfect dram to compliment the proper american rebel at heart, taking two different American produced rye whiskies with unmistakable character and blending them for a proprietary yin and yang. After all who doesn’t feel a little devilish from time to time.

These Barrels are still aging and will only be released when absolutely ready, so keep an eye out for this. Hint: it’s damn tasty. I can tell you these rye whiskies are a mash up of two different mash bills, one for it’s intense spicy rye notes and the other for it’s creamier sweet notes making the end result a particularly pleasant blend of creamy vanilla, Christmas spices, dried leaves, charred oak, and some sweet caramel.

rum cask finished rye whiskey

I know we’ve convinced you that we like whiskey, or at least I hope we have at this point! We also happen to really appreciate rums. For those nice travels to the sunny Caribbean, we tend to enjoy a bottle of local rum on the beach. This gave birth to a natural companionship where sweet meets spice, opposites attract in all the right ways. We take our Straight Rye Whiskey with complex spices and lock it away in a cask that was home to some pretty wild Caribbean rums, allowing them to work out their differences. Unlike many finished rye whiskies our goal was to simply compliment the whiskey, not overtake it, this takes some serious watching and we believe our methods producing a truly complimentary spirit full of rich characteristics, a glass you won’t want to put down.

Exploratory cask SERIES

The Exploratory Cask Series are super limited productions, sometimes as little as one cask of a whiskey that we decided to do something fun with. Inspired by every cask that we try, along with a dash of inspiration, sometimes ours, sometimes from our favorite mixologist or spirits purveyor, and sometimes from someone we met at a wine tasting or on a plane. Something different, something truly small batch, something not always perfect, but certainly damn good, comes out and we get to share that with the world. These releases allow us to really geek out on good whiskey, and we hope you will geek out right along with us! These batches are extremely limited and released only when they are ready to be, never before.

~what’s white & red all over?~

The Second iteration of the famed Madeira Release! … but with a twist on it, no not a twist of orange peel but certainly a twist of citrus with a concord grape character that leads to a full bodied whiskey. This one may go down in the record books as the pp&J as in Jam, jam ,jam!

~Old Block~

Our head of sales (yes, we even allow him to make suggestions from time to time) was at an impromptu meeting with a wine and spirits buyer, and they got to talking about how it would be cool to work with some local wineries on barrel finishes. The wine guys all suggested we reach out to Kiona Vineyards in Washington’s Red Mountain AVA. They were not only kind enough to let us use some of their barrels, they also gave us barrels that had been aging some of their Old Block Cabernet Sauvignon, the vines that started the red mountain AVA. Ripe red cherries on the nose with oaky undertones and backed with a hint of pie crust. Classic Tennessee whiskey characters from toasted vanilla, rich blackberries to earthy cigar box and dry minerals.

Note: this one breathes like a fine wine, we recommend sampling this neat over a lengthy period of time to see how it transforms in your glass before you.

~That Sweet Sweet (Madeira)~

We finished a single cask worth of Doc Swinson’s Madeira Cask Finish. We had a limited quantity of our 12 year old Indiana bourbon left in stock (one barrel to be exact) and this one was a pet project on our blender’s behalf. There was finite room for a finishing cask in a shipment of sherry casks from Europe, and after enjoying some whiskey from the barrel we decided that Madeira just might be the perfect compliment to add to the collection. As this is a single cask release, an exceptionally limited number of bottles were ever produced. Oh, this release won a real gold medal as well, yeah baby! We hope you can find a bottle and share it!

The Astute Proprietor Series releases are, well for the Astute proprietor of course, similar to the Exploratory Cask Series and our Flagship Series whiskies, these are where Astute shop owners, bars and mixologists get to play. Hand selected barrels, unique cask finishes and and all the technical decisions are guided and chosen by the creators visions, we just help make it happen.
