Triple Cask Bourbon

Often described as our “flagship” expression, Triple Cask is one of our most awarded whiskeys, and an outstanding example of what Doc’s does best: sourcing great american whiskeys from the southern US, finishing it in the Pacific Northwest in barrels sourced from different regions around the world, then blending those flavors and traditions to create a uniquely American whiskey.

Triple Cask was inspired by old-world techniques utilized in the production of Scotch Whisky and Irish Whiskey, where much of the magic happens through the art of blending. Our goal was to take good whiskeys and blend them together and see how the blend would enhance the whiskeys without losting the flavors of the whiskeys. After years of finishing whiskies in a variety of different casks, we struck gold using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of trusted producers.

These casks allow the delicate characteristics of past occupants to mingle and marry with bolder aspects of our straight bourbon. Each release of Triple Cask is ultimately meticulously blended in ex-Cognac Foeders prior to bottling. This approach imparts a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.
